  • 1.5 lbs boneless chicken breast, cubed
  • 4 carrots, peeled and sliced
  • 3 potatoes, peeled and diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp thyme
  • 1 tsp salt
  • ½ tsp pepper
  • 3 cups chicken broth
  • 1 tbsp cornstarch + 2 tbsp water (optional, for thickening)
  • Fresh parsley for garnish (optional)

Step 1: Add Your Ingredients

Place chopped carrots, potatoes, and onion into the bottom of your slow cooker. Add the cubed chicken on top.

Step 2: Pour In Broth & Seasonings

Add garlic, thyme, salt, and pepper. Pour in the chicken broth. Give everything a gentle stir.

Step 3: Cook Low and Slow

Put the lid on and set your slow cooker to:

  • Low for 6–8 hours
  • OR High for 4–5 hours
    The chicken should be fully cooked, and veggies tender.

Step 4: Thicken (Optional)

Mix cornstarch with cold water and stir into the stew 20 minutes before serving. Let it cook uncovered until it thickens slightly.
